  • 1 lb (450g) boneless, skinless chicken breast or thighs, cut into bite-sized cubes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon red pepper flakes (optional)
  • Wooden or metal skewers

Bang Bang Sauce:

  • ¼ cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha (adjust for spice level)
  • 1 teaspoon honey
  • 1 teaspoon lime juice
  • ½ teaspoon garlic powder

Instructions

  • Marinate the Chicken – In a bowl, toss chicken with olive oil, garlic powder, salt, black pepper, paprika, and red pepper flakes. Let it marinate for at least 15 minutes.

  • Prepare the Skewers – Thread the marinated chicken onto skewers, leaving space between pieces for even cooking.

  • Grill the Chicken – Heat a grill or grill pan over medium-high heat. Cook the skewers for about 4-5 minutes per side until the chicken is fully cooked and has nice grill marks.

  • Make the Sauce – In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, honey, lime juice, and garlic powder until smooth.

  • Coat the Skewers – Brush or drizzle the bang bang sauce over the grilled chicken skewers.

  • Serve & Enjoy – Garnish with chopped green onions or sesame seeds and serve immediately.

Notes

  • For extra flavor, marinate the chicken for up to 2 hours.
  • Adjust spice levels by increasing or decreasing the sriracha.
  • No grill? You can cook these skewers in a skillet or bake them at 400°F (200°C) for 15-18 minutes.
