- 3 ripe bananas, mashed
- 1/2 cup melted butter
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts or pecan
Instructions
Preheat oven to 350°F (175°C). Line a muffin tin.
In a large bowl, mix bananas, butter, sugars, eggs, and vanilla.
In another bowl, whisk flour, baking soda, and salt. Add to banana mixture and stir.
Fold in nuts. Divide batter into muffin cups.
Bake 18–22 minutes or until a toothpick comes out clean.
