Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecan

Instructions

  •  
  • Preheat oven to 350°F (175°C). Line a muffin tin.

  • In a large bowl, mix bananas, butter, sugars, eggs, and vanilla.

  • In another bowl, whisk flour, baking soda, and salt. Add to banana mixture and stir.

  • Fold in nuts. Divide batter into muffin cups.

  • Bake 18–22 minutes or until a toothpick comes out clean.

Notes

  • Use very ripe bananas for best flavor
