Ingredients

  • 1 ½ pounds flank steak
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • ¼ cup balsamic vinegar
  • 2 cups cherry tomatoes, halved
  • 8 ounces fresh mozzarella, diced
  • 1 cup fresh basil leaves, chopped
  • 1 tablespoon honey
  • 1 teaspoon garlic powder

Instructions

  1. Season the flank steak with salt and black pepper on both sides.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, and garlic powder. Reserve half of the marinade for serving.
  3. Place the steak in a large resealable plastic bag or shallow dish and pour the remaining marinade over it. Seal the bag or cover the dish and marinate in the refrigerator for at least 1 hour, or up to 8 hours for more flavor.
  4. Preheat the grill to medium-high heat. Remove the steak from the marinade and discard the marinade.
  5. Grill the steak for 5-7 minutes on each side for medium-rare, or until it reaches your desired doneness. Remove from the grill and let it rest for 5 minutes.
  6. While the steak is resting, combine the cherry tomatoes, mozzarella, and basil in a bowl. Drizzle with the reserved marinade and toss gently to combine.
  7. Slice the steak against the grain into thin strips. Serve topped with the Caprese salad mixture.

Notes

  • For a smoky flavor, add a few drops of liquid smoke to the marinade.
  • To make it a complete meal, serve with grilled vegetables or a side of quinoa.
