A delicious and easy recipe for Baked Cod in Coconut Lemon Cream Sauce, perfect for a weeknight dinner.

- 2 (6-ounce) cod fillets
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 cup coconut milk
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon honey
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F.
- Pat the cod fillets dry with paper towels and place them in a baking dish. Drizzle with olive oil and season with salt and pepper.
- In a medium bowl, whisk together the coconut milk, lemon juice, lemon zest, garlic, ginger, and honey until well combined.
- Pour the coconut sauce over the cod fillets in the baking dish.
- Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.
- Remove from the oven and let it cool for a couple of minutes. Garnish with fresh parsley before serving.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the coconut sauce.
- Serve with steamed rice or quinoa to soak up the delicious sauce.
