Ingredients

  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1 cup coconut milk
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon honey
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F.
  2. Pat the cod fillets dry with paper towels and place them in a baking dish. Drizzle with olive oil and season with salt and pepper.
  3. In a medium bowl, whisk together the coconut milk, lemon juice, lemon zest, garlic, ginger, and honey until well combined.
