This Baked Beef Chiles Rellenos Casserole layers seasoned beef, green chiles, and cheese into a spicy, satisfying weeknight dinner.

- 1 lb ground beef
- 1 small onion, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 2 (4 oz) cans diced green chiles
- 2 cups shredded cheddar or Mexican blend cheese
- 4 eggs
- 1 cup milk
- ½ cup all-purpose flour
- 1 teaspoon baking powder
Instructions
Preheat oven to 350°F (175°C). Grease a 9×9-inch baking dish.
Cook beef and onion in a skillet until browned. Drain excess grease. Stir in spices.
Layer half the green chiles in the dish, followed by beef and cheese. Repeat layers.
In a bowl, whisk eggs, milk, flour, and baking powder. Pour over casserole.
Bake for 35–40 minutes or until set and golden.
Notes
- Top with sour cream or salsa before serving.
- Use pepper jack cheese for added heat.
