Preparation
- Thaw two sheets of puff pastry at room temperature for 30-60 minutes. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat cream cheese, white sugar, and vanilla extract until smooth, about 2-3 minutes. Add red food coloring and fold in half of the diced strawberries.
- Roll out the puff pastry on a floured surface and cut out heart shapes with a cutter. Lightly press down the edges to form a rim.
- Fill each heart with 1-2 tablespoons of cream cheese filling and top with remaining diced strawberries.
- Whisk together one egg and cold water to create an egg wash. Brush the edges of each pastry heart with the mixture.
- Bake the danishes on the prepared baking sheet for 12-15 minutes or until golden-brown. Rotate the baking sheet halfway through for even browning.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack. Optionally dust with powdered sugar or drizzle with glaze.

Notes
Ensure puff pastry stays cold until ready to bake for the best texture. Use room-temperature cream cheese for easier blending.
