Method
 

Preparation
  1. Pat the sea scallops dry with paper towels to remove excess moisture and season both sides with sea salt.
  2. Heat avocado oil in a large sauté pan over medium-high heat until shimmering.
  3. Sear the seasoned scallops for 1.5 to 2 minutes on each side, until golden-brown. Remove from pan.
  4. Add orange zest and juice, lemon juice, and grated ginger to the pan and cook for 1-2 minutes.
  5. Stir in butter or ghee until melted and sauce thickens slightly, about 2-3 minutes.
  6. Return scallops to the pan and spoon sauce over them; cook for an additional minute.
  7. Plate scallops and drizzle with remaining citrus ginger sauce; garnish with fresh thyme.
