For the Ravioli
  • 1 package Fresh or frozen ravioli filled with ricotta or desired filling
For the Sauce
  • 8 ounces Spanish chorizo or substitute with bacon or pancetta plus smoked paprika
  • 8 ounces Cremini mushrooms or shiitake/wild mushrooms
  • 1 cup Heavy cream or light cream as an alternative
  • 2 cloves Garlic freshly minced
  • 1 medium Shallot or substitute with onion
  • 2 tablespoons Olive oil for sautéing
  • 2 tablespoons Butter adds richness to the sauce
  • to taste Salt
  • to taste Black pepper
  • 2 tablespoons Fresh parsley for garnish

Method
 

Cooking Steps
  1. Fill a large pot with water, add salt, and bring it to a boil.
  2. In a skillet, heat olive oil and sauté the mushrooms for 5-7 minutes.
  3. In the same skillet, cook chorizo for 4-5 minutes, then add garlic and shallot for 2 minutes.
  4. Return mushrooms to skillet and season with salt and pepper, cooking for another minute.
  5. Stir in heavy cream and let sauce simmer on low heat for about 3 minutes.
  6. Cook ravioli in boiling water according to package instructions, about 2-3 minutes.
  7. Transfer cooked ravioli to the skillet with sauce and toss gently to coat.
  8. Garnish with parsley and serve immediately.
