  • 1 pound ground beef 93% lean for healthier option
  • 1 packet taco seasoning store-bought or homemade
For the Sweet Potatoes
  • 2 medium sweet potatoes or substitute with cauliflower for low-carb
  • 2 tablespoons olive oil for roasting
For the Toppings
  • 1 cup cottage cheese or Greek yogurt for a substitute
  • 1 avocado freshly sliced
  • to taste hot honey or homemade with honey and red chili flakes

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Peel and cube the sweet potatoes into bite-sized pieces and set aside.
  2. In a large skillet, cook the ground beef over medium-high heat for 7-10 minutes until browned. Stir in taco seasoning and let simmer for a couple of minutes.
  3. Toss sweet potato cubes with olive oil and salt. Spread on a baking sheet and roast for 25-30 minutes until tender.
  4. Layer roasted sweet potatoes in serving bowls, top with seasoned ground beef, cottage cheese, and sliced avocado.
  5. Drizzle hot honey generously over the bowls and serve immediately.
