- In a large soup pot, add chicken, garlic, onion, celery, carrots, bay leaves, salt, and pepper. Pour in water or chicken stock and stir well to combine.
- Bring the mixture to a rolling boil over medium heat. Reduce heat to low, cover, and let it simmer gently for 30 minutes.
- Carefully remove the chicken from the pot and shred into bite-sized pieces.
- Add arborio rice and butter to the pot. Stir to distribute rice evenly and simmer on low for about 10 minutes.
- Reintroduce shredded chicken, lemon juice, parsley, and dill. Stir and cook for an additional 10 to 15 minutes.
- Taste and adjust seasoning with salt and pepper. Remove bay leaves and serve hot.
