Instructions
  1. In a large soup pot, add chicken, garlic, onion, celery, carrots, bay leaves, salt, and pepper. Pour in water or chicken stock and stir well to combine.
  2. Bring the mixture to a rolling boil over medium heat. Reduce heat to low, cover, and let it simmer gently for 30 minutes.
  3. Carefully remove the chicken from the pot and shred into bite-sized pieces.
  4. Add arborio rice and butter to the pot. Stir to distribute rice evenly and simmer on low for about 10 minutes.
  5. Reintroduce shredded chicken, lemon juice, parsley, and dill. Stir and cook for an additional 10 to 15 minutes.
  6. Taste and adjust seasoning with salt and pepper. Remove bay leaves and serve hot.
