- In a medium pot, combine ½ cup of honey, ½ cup of still water, and a few slices of root ginger. Heat over medium heat for 3–4 minutes until fully dissolved and slightly syrupy. Remove from heat, discard ginger, and cool completely.
- Fill two tumbler glasses halfway with ice cubes or crushed ice.
- Once the honey syrup is cool, pour approximately ½ cup of syrup into each glass over the ice.
- Top each glass with 1 cup of sparkling water and stir gently to combine.
- Garnish with a slice of lemon or a sprig of fresh mint. Serve immediately and enjoy!
