- Preheat your oven to 325°F (160°C).
- In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter until it resembles wet sand. Press into a springform pan and bake for 8–10 minutes until golden.
- In a large bowl, beat cream cheese and sugar until fluffy. Gradually add sour cream and vanilla. Add eggs one at a time, mixing gently till just incorporated.
- In a saucepan, combine heavy cream, brown sugar, and butter until boiling. Reduce heat and simmer for 3–5 minutes until thickened. Divide and color one portion green and the other purple.
- Pour the cheesecake filling over the cooled crust. Drizzle colored mixtures on top and swirl with a toothpick to create a marbled effect.
- Bake for 50–60 minutes until the edges are set and center is slightly wobbly. Gradually cool in the oven for 1 hour, then refrigerate for at least 4 hours.
