Step-by-Step Instructions
  1. Set your Instant Pot to the SAUTE function on medium heat. Add diced salt pork or bacon to the pot, cooking until crisp, about 5–7 minutes. Toss in the diced onion and sauté until translucent, roughly 3–4 minutes.
  2. Pour in the chicken broth and scrape up any browned bits stuck to the bottom of the pot. Press CANCEL after deglazing.
  3. Add the white vinegar, then layer the collard greens in the pot, packing them firmly but not tightly.
  4. Lock the lid into place and set the valve to SEALING. Set the Instant Pot to HIGH PRESSURE for 10 minutes.
  5. When the timer indicates the greens are ready, carefully perform a quick release by turning the valve to VENTING.
  6. Gently stir the collard greens, taste for seasoning, and adjust with salt and pepper as needed.
