  • 2 cups cheddar cheese sharp, or swap for mozzarella or a dairy-free cheese for vegan
  • 1 cup mozzarella cheese or a plant-based alternative for vegan recipes
  • 2 cups milk or substitute with plant-based milk for dairy-free variation
  • 2 tablespoons butter use vegan butter as an alternative
  • 2 cloves garlic optional, depending on your taste preference
  • to taste salt essential seasoning
  • to taste pepper essential seasoning
For the Crunchy Topping
  • 1 cup breadcrumbs or use panko or crushed crackers as substitutes

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish with butter or cooking spray.
  2. In a large pot, boil salted water and add your macaroni or chosen pasta. Cook for about 6-7 minutes, then drain.
  3. In a blender, combine the baby spinach, fresh herbs, and milk, blending until smooth. Pour into a saucepan and add cheddar and mozzarella, stirring until melted.
  4. Pour the cheese sauce over the cooked pasta and stir to coat evenly.
  5. In a small bowl, mix the breadcrumbs, melted butter, and minced garlic together.
  6. Transfer the mac and cheese to the casserole dish, sprinkle the breadcrumb topping generously, and bake for 20-30 minutes.
  7. Let the dish cool for about 5 minutes before serving.
