  • 2 cups shredded Rotisserie Chicken Pre-cooked for convenience
  • 1 large Onion Chopped, yellow or sweet onions preferred
  • 3 cloves Garlic Minced
  • 8 ounces Fresh Mushrooms Button or Cremini, sliced
For Creaminess
  • 1 cup Heavy Cream Half-and-half can be used
For Flavor
  • 2 teaspoons Fresh Thyme Dried thyme can be used; reduce amount by half
  • Salt To taste
  • Pepper To taste
For Cooking
  • 2 tablespoons Olive Oil For sautéing

Instructions
  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
  2. Stir in minced garlic and sliced mushrooms. Cook for 5-7 minutes, stirring occasionally, until mushrooms turn golden brown.
  3. Pour in vegetable broth and add shredded rotisserie chicken. Stir to combine and let simmer for around 5 minutes.
  4. Reduce heat to low and stir in heavy cream, thyme, salt, and pepper. Let simmer for an additional 10 minutes.
  5. Taste the soup and adjust seasonings as needed before serving.
  6. Ladle soup into bowls and garnish with extra thyme or cracked pepper if desired. Serve with crusty bread.
