For the Herby Yogurt Dip
  • 0.75 cup Plain Greek Yogurt can substitute with dairy-free yogurt
  • 4 pieces Green Onions roughly chopped
  • 0.25 cup Fresh Dill plus more for garnish
  • 2 cloves Garlic Cloves smashed
  • 10 large leaves Fresh Basil Leaves
  • 2 tablespoons Fresh Lemon Juice from 1 lemon

Method
 

Preparation Steps
  1. Preheat your grill to medium-high heat, approximately 400°F.
  2. Toss the sweet potato wedges with olive oil and kosher salt on a sheet pan.
  3. Place the sweet potato wedges on the grill cut side down and grill for about 15 minutes, turning every 2-3 minutes.
  4. In a blender, combine yogurt, green onions, dill, garlic, basil, and lemon juice; blend until smooth.
  5. Once tender and charred, serve the sweet potatoes with the herby yogurt dip and garnish with extra dill.
