  • 2 cups Marinara Sauce Store-bought or homemade.
  • ¼ cup Fresh Parsley For garnish.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C). Toss the cubed butternut squash and garlic with olive oil, salt, and pepper, then roast for 25-30 minutes.
  2. Cook the lasagna noodles in salted boiling water for 8-10 minutes until al dente, then drain and cool.
  3. Mash the roasted squash and garlic in a bowl, then mix in ricotta, mozzarella, Parmesan, salt, pepper, and sage.
  4. Spread marinara sauce in a baking dish. Fill lasagna noodles with filling, roll tightly, and place seam-side down in the dish.
  5. Preheat oven to 350°F (175°C) and pour marinara over roll-ups. Cover with foil and bake for 20 minutes, then broil for 2-3 minutes.
  6. Let cool for a few minutes, garnish with parsley, and serve warm.
