Step-by-Step Instructions
  1. Preheat oven to 325°F (163°C). Melt 2 tablespoons of unsalted butter in a cast-iron skillet over medium-high heat.
  2. Add halved baby potatoes, onion powder, 1/4 teaspoon of kosher salt, and a dash of black pepper. Sauté for 1-2 minutes, then stir occasionally until golden brown, about 4 minutes.
  3. Transfer the potatoes to a baking sheet lined with parchment paper and roast in the preheated oven.
  4. Wipe the skillet clean, melt 1 tablespoon of unsalted butter, add boneless sirloin steak cubes seasoned with remaining kosher salt, and sear for 4-5 minutes.
  5. Reduce heat to low, stir in 1 tablespoon of butter, minced garlic, and thyme leaves, cooking until garlic is fragrant.
  6. Combine roasted crispy potatoes with steak bites in the skillet, toss gently, and garnish with fresh parsley before serving.
