Ingredients
  

For the Marinade
  • 1 cup Yogurt preferably low-fat
  • 1 tablespoon Ginger fresh, minced
  • 1 tablespoon Garlic fresh, minced
  • 1 teaspoon Cayenne Pepper adjust to taste
  • 2 tablespoons Lime Juice or lemon juice
For the Chicken
  • 4 pieces Chicken Thighs bone-in preferred
For the Spice Blend
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Paprika smoked for extra flavor
  • 1 teaspoon Turmeric
  • 1 teaspoon Salt to taste
  • 1 teaspoon Pepper to taste

Method
 

Preparation
  1. Start by washing the chicken thighs under cold water and patting them dry with paper towels.
  2. In a large bowl, rub salt, pepper, and lime juice all over the chicken. Allow to sit for 15 minutes.
  3. In a separate bowl, combine yogurt, ginger, garlic, cayenne, and spices. Whisk until smooth.
  4. Dip each chicken thigh into the marinade and coat generously. Refrigerate for at least 6 hours.
  5. Preheat the oven to broil or 450°F and prepare a baking sheet.
  6. Place marinated chicken on the baking sheet and bake for 15-20 minutes.
  7. Flip the chicken thighs and bake for an additional 10 minutes.
  8. Let the chicken rest for a few minutes before serving.
