Preparation
- Start by washing the chicken thighs under cold water and patting them dry with paper towels.
- In a large bowl, rub salt, pepper, and lime juice all over the chicken. Allow to sit for 15 minutes.
- In a separate bowl, combine yogurt, ginger, garlic, cayenne, and spices. Whisk until smooth.
- Dip each chicken thigh into the marinade and coat generously. Refrigerate for at least 6 hours.
- Preheat the oven to broil or 450°F and prepare a baking sheet.
- Place marinated chicken on the baking sheet and bake for 15-20 minutes.
- Flip the chicken thighs and bake for an additional 10 minutes.
