Ingredients
  

For the Peppers
  • 4 Bell Peppers Choose firm, colorful peppers
For the Filling
  • 1 lb Ground Beef Or substitute with ground turkey or plant-based meat
  • 1 cup Cooked Rice Can substitute with quinoa or cauliflower rice
  • 1 Onion Finely chopped
  • 2 cloves Garlic Minced
  • 1 cup Tomato Sauce
  • 1 cup Diced Tomatoes Drain if a less juicy filling is desired
  • 1 tbsp Italian Seasoning
  • 1 tsp Salt
  • 1 tsp Black Pepper
For the Topping
  • 1 cup Mozzarella Cheese Or substitute with cheddar or pepper jack
  • 1/4 cup Parmesan Cheese Nutritional yeast as a vegan alternative
For Cooking
  • 1 tbsp Olive Oil Or substitute with vegetable or canola oil
  • 2 tbsp Fresh Parsley Chopped for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off each bell pepper, remove the seeds and rinse under cold water.
  3. In a large skillet over medium heat, add olive oil and sauté chopped onion and minced garlic for 3-4 minutes until translucent.
  4. Add the ground beef to the skillet, cook for 5-7 minutes until browned.
  5. Stir in cooked rice, tomato sauce, diced tomatoes, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  6. Stuff each bell pepper with the mixture and place upright in a baking dish.
  7. Add about 1/4 inch of water to the baking dish, cover tightly with aluminum foil, and bake for 35 minutes.
  8. Remove foil, sprinkle mozzarella cheese over the top, and bake uncovered for an additional 10-15 minutes until cheese is melted.
  9. Let the peppers rest for a few minutes, garnish with fresh parsley, and serve warm.
