  1. Begin by slicing the chicken into bite-sized pieces, maximizing surface area for even cooking. Season the chicken generously with smoked paprika, oregano, salt, and pepper. Allow it to marinate for about 5 minutes while you heat up the skillet.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the seasoned chicken pieces to the pan in a single layer. Cook for 10-15 minutes, stirring occasionally, until golden brown and cooked through.
  3. In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach and half of the halved cherry tomatoes. Cook for about 5-10 minutes, stirring continuously, until the spinach has wilted and tomatoes are softening.
