Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Coat each chicken breast generously with mayonnaise and dredge in crushed kettle-cooked potato chips.
  3. Arrange the coated chicken on the baking sheet and bake for 15 to 17 minutes until golden brown and cooked through.
  4. Preheat your waffle iron.
  5. Beat egg whites until soft peaks form. In a separate bowl, combine flour, sugar, baking powder, baking soda, and salt.
  6. Mix melted butter with buttermilk, fold into dry ingredients, and then gently incorporate whipped egg whites.
  7. Spread batter in the waffle iron and cook for about 5 minutes until golden brown.
  8. In a saucepan, melt butter, whisk in flour to create a roux, gradually add milk, whisking until thickened.
  9. To serve, place a waffle on each plate, top with a chicken breast, and drizzle with gravy.
