Preparation
- Preheat your oven to 400°F (200°C).
- Scrub the potatoes, pierce several times with a fork, rub with olive oil, and season with salt and pepper. Bake potatoes directly on oven rack or a baking sheet until tender.

- Carefully remove baked potatoes, slice lengthwise, fluff the insides, and fill with the beef mixture. Top with shredded cheese.

- Garnish with sour cream, green onions, diced tomatoes, black olives, and cilantro. Serve warm.
