  • 1 pound Ground Beef or ground turkey for a leaner meal
  • 2 tablespoons Olive Oil can substitute with canola oil
  • 1 medium Onion finely chopped; yellow onions work best
  • 2 cloves Garlic minced; fresh provides the best taste
  • 3 cups Potatoes peeled and diced; Yukon Gold or russet
  • to taste Salt adjust to personal preference
  • to taste Black Pepper freshly ground adds the best flavor
  • 1 teaspoon Paprika smoked paprika can add extra flavor
  • 1 teaspoon Dried Oregano Italian seasoning is a good substitute
  • 1 cup Cheddar Cheese shredded; mozzarella can be used as an alternative
  • 1 cup Beef Broth chicken or vegetable broth can also be used
  • to taste Fresh Parsley for garnish; can use basil or chives

Method
 

Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
  2. Add 1 pound of ground beef and brown thoroughly, breaking apart as it cooks for about 5 minutes.
  3. Stir in 1 finely chopped onion and 2 minced garlic cloves, and sauté for 3–4 minutes until translucent.
  4. Add 3 cups of diced potatoes and season with salt, black pepper, paprika, and dried oregano, mixing well.
  5. Pour in 1 cup of beef broth, cover, and reduce heat to low. Cook for 20–25 minutes until potatoes are fork-tender.
  6. Sprinkle 1 cup of shredded cheddar cheese over the top. Cover and let cook for another 2–3 minutes until melted.
  7. Garnish with freshly chopped parsley before serving hot from the skillet.
