- Heat 2 tablespoons of olive oil in a large skillet over medium heat until shimmering.
- Add 1 pound of ground beef and brown thoroughly, breaking apart as it cooks for about 5 minutes.
- Stir in 1 finely chopped onion and 2 minced garlic cloves, and sauté for 3–4 minutes until translucent.
- Add 3 cups of diced potatoes and season with salt, black pepper, paprika, and dried oregano, mixing well.
- Pour in 1 cup of beef broth, cover, and reduce heat to low. Cook for 20–25 minutes until potatoes are fork-tender.
- Sprinkle 1 cup of shredded cheddar cheese over the top. Cover and let cook for another 2–3 minutes until melted.
- Garnish with freshly chopped parsley before serving hot from the skillet.
