Ingredients
  

Special Sauce
  • 1 cup whole-egg mayonnaise substitute with Greek yogurt for a lighter version
  • ¼ cup diced gherkins can substitute with sweet pickles or relish
  • 1 tablespoon Dijon mustard yellow mustard can be a substitute
  • 2 tablespoons ketchup no substitute necessary
  • 1 teaspoon sweet paprika can be omitted if unavailable
  • 1 teaspoon onion powder can be omitted if unavailable but may alter taste
  • 1 teaspoon garlic powder can be omitted if unavailable
Tacos
  • 1 pound minced (ground) beef substitute with ground turkey or chicken if desired
  • 8 pieces soft flour tortillas corn tortillas can replace for a gluten-free option
  • 8 slices American burger cheese cheddar or any melting cheese can work
Toppings
  • 2 cups shredded lettuce baby arugula or shredded cabbage can be used as alternatives
  • 8 slices sliced gherkins (dill pickles) omit if less crunch is desired
  • ½ cup finely diced onion use green onions for a milder flavor

Method
 

Special Sauce Preparation
  1. In a medium bowl, combine whole-egg mayonnaise, diced gherkins, Dijon mustard, ketchup, sweet paprika, onion powder, and garlic powder. Mix thoroughly until smooth and set aside.
Beef Filling Preparation
  1. Heat a large skillet over medium heat and divide minced beef into 8 equal portions. Cook for about 7-10 minutes, stirring occasionally until browned. Season with salt and pepper.
Tortilla Cooking
  1. Lay soft flour tortillas flat. Once beef is cooked, reduce heat and assemble each tortilla with cooked beef in center. Heat a non-stick pan over medium heat, spritz with olive oil, and cook each tortilla beef-side down for 2-3 minutes.
Cheese Melting
  1. Place slices of American burger cheese over the beef on each taco and let the residual heat melt the cheese for about 1-2 minutes.
Taco Assembly
  1. Remove tacos from skillet and top with shredded lettuce, sliced gherkins, and diced onion. Drizzle special sauce over the top and serve immediately.
