Ingredients
  

  • 1 pound ground beef
  • 1 medium zucchini diced
  • 1 medium sweet potato peeled and diced
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  4. Stir in the diced sweet potato, paprika, oregano, salt, and pepper. Cover the skillet and cook for about 10 minutes, stirring occasionally, until the sweet potato is tender.
  5. Add the diced zucchini to the skillet, stir well, and cook for another 5 minutes until the zucchini is tender but still crisp.
  6. Remove from heat and garnish with fresh parsley before serving.
