Step-by-Step Instructions
  1. In a medium saucepan, combine 1/2 cup water, honey, sliced fresh ginger, and a pinch of cayenne pepper. Bring to a gentle boil and let simmer for 1-2 minutes. Remove from heat and steep mint leaves for 10 minutes. Strain and set aside.
  2. On a small plate, mix equal parts coarse sugar and granulated sugar with a pinch more cayenne pepper. Wet the rim of the glass with a lime wedge and dip it into the sugar mixture.
  3. Fill the glass with ice cubes. In a shaker, combine pomegranate juice, grapefruit juice, lime juice, spicy ginger syrup, and tequila. Stir gently, then top with ginger beer.
  4. Pour cocktail into the rimmed glass filled with ice. Garnish with fresh mint or a slice of lime. Serve immediately.
