For the Salad
  • 2 cups Cooked Chicken Breast Shredded rotisserie chicken is convenient.
  • 1 can Black Beans Rinsed and drained.
  • 1 cup Corn Kernels Fresh, canned, or frozen.
  • 1 Red Bell Pepper Finely diced.
  • 0.5 Red Onion Finely chopped.
  • 1 Avocado Diced just before serving.
  • 1 cup Cherry Tomatoes Sliced in half.
  • 1 handful Fresh Cilantro Optional.
  • 0.5 cups Shredded Cheese Mexican blend or cheddar.
  • Tortilla Strips/Chips Optional, for extra crunch.
For the Dressing
  • 0.5 cups Sour Cream or Greek Yogurt Greek yogurt lightens it up.
  • 2 Limes Juiced.
  • 2 tablespoons Olive Oil Avocado oil can be used instead.
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Chili Powder
  • Salt & Pepper To taste.

Method
 

Preparation Steps
  1. In a small bowl, whisk together sour cream (or Greek yogurt), lime juice, olive oil, ground cumin, and chili powder until smooth. Season with salt and pepper to taste. Set aside.
  2. In a large mixing bowl, combine cooked chicken, black beans, corn, red bell pepper, red onion, cherry tomatoes, avocado, and cilantro. Gently mix until well-distributed.
  3. Pour the dressing over the salad mixture and gently toss until everything is coated.
  4. Transfer to a serving platter or bowls, sprinkle with shredded cheese and optional tortilla strips. Serve immediately or chill for 30 minutes.
