  • 4 pieces Tomatillos Husked and halved
  • 2 cloves Garlic Cloves Whole
  • 1 medium Onion White, can substitute
  • 1 cup Fresh Pineapple or Canned Pineapple Canned should be drained and patted dry
  • 2 pieces Chipotle Peppers in Adobo Adjust for desired spice level
  • 1 teaspoon Kosher Salt Adjust to taste
Optional Add-Ins
  • 1/4 cup Fresh Cilantro Chopped
  • 1 tablespoon Lime Juice Add to taste
  • 1 medium Jalapeños Diced for heat
  • 1 medium Roasted Red Bell Peppers Substitute for tomatillos
  • 1 cup Mango Can replace pineapple

Method
 

Step-by-Step Instructions
  1. Preheat the broiler to high.
  2. Line a baking sheet with aluminum foil and spread tomatillos, garlic, onion, and pineapple.
  3. Broil for about 10 minutes, then flip and broil for an additional 5 minutes.
  4. Transfer roasted ingredients to a blender, add chipotle peppers, and pulse until chunky.
  5. Taste and adjust with kosher salt as needed.
  6. Serve immediately with chips or on tacos.
