  • 1 base Pizza Dough homemade or store-bought
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 cup Water
For the Brine
  • 1 handful Fresh Parsley or basil
  • 2 cloves Garlic minced
  • 1 tablespoon Lemon Zest freshly zested
  • 2 tablespoons Lemon Juice add more after baking as needed
  • 1 teaspoon Fine Salt use sea salt if preferred
  • Black Pepper to taste
For the Toppings
  • 8 ounces Fresh Mozzarella drained and sliced
  • 1/4 cup Grated Parmesan Cheese omit for vegetarian option
  • Freshly Ground Black Pepper optional for finishing touch

Preparation Steps
  1. Preheat your oven to 450°F (230°C). If using store-bought dough, let it come to room temperature for about 20 minutes.
  2. Drain fresh mozzarella and slice it into ½-inch thick pieces. Set aside while preparing the lemon brine.
  3. On parchment paper, press the dough from the center outward to form a 9x13-inch rectangle. Transfer to a pizza peel.
  4. In a jar, combine olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and pepper. Shake until emulsified.
  5. Create dimples on the dough, drizzle the brine over it, and scatter mozzarella slices on top.
  6. Slide the pizza onto the preheated stone or baking sheet and bake for 8-10 minutes until golden and bubbly.
  7. Drizzle fresh lemon juice over the pizza, sprinkle with Parmesan and parsley, and add cracked pepper before serving.
