Preparation Steps
- Preheat your oven to 450°F (230°C). If using store-bought dough, let it come to room temperature for about 20 minutes.
- Drain fresh mozzarella and slice it into ½-inch thick pieces. Set aside while preparing the lemon brine.
- On parchment paper, press the dough from the center outward to form a 9x13-inch rectangle. Transfer to a pizza peel.
- In a jar, combine olive oil, water, parsley, garlic, lemon zest, lemon juice, salt, and pepper. Shake until emulsified.
- Create dimples on the dough, drizzle the brine over it, and scatter mozzarella slices on top.
- Slide the pizza onto the preheated stone or baking sheet and bake for 8-10 minutes until golden and bubbly.
- Drizzle fresh lemon juice over the pizza, sprinkle with Parmesan and parsley, and add cracked pepper before serving.
