  • 1 bunch Asparagus Trim woody ends
  • 1 cup Feta Cheese Use vegan feta for dairy-free option
  • 1/4 cup Fresh Herbs (Dill, Parsley, Mint) Customize with your favorite herbs
  • 1 medium Shallot (or Red Onion) Can use green onions for milder flavor
For the Dressing
  • 1/4 cup Extra Virgin Olive Oil Avocado oil is a substitute
  • 2 tablespoons Lemon Juice Use fresh juice for best results
  • 1 tablespoon Lemon Zest Always use fresh lemons
  • 1 teaspoon Dijon Mustard Substitute with regular mustard if desired
  • to taste Salt Adjust according to taste
  • to taste Freshly Ground Pepper Best when freshly cracked

  • 1/4 cup Chives or Green Onion Other fresh herbs can be substituted

Method
 

Preparation
  1. Preheat your grill to medium heat, or your oven to 400°F for roasting. Trim the woody ends of the asparagus.
  2. If grilling, toss asparagus in olive oil, season with salt and pepper, and grill for 5-7 minutes until charred. For roasting, place on a baking sheet and roast for 12-15 minutes until fork-tender.
  3. For blanched asparagus, boil salted water, add asparagus, and cook for 2-3 minutes. Plunge into ice water to halt cooking.
  4. In a medium bowl, whisk together olive oil, lemon juice, lemon zest, Dijon mustard, salt, pepper, and shallots.
  5. Transfer cooled asparagus to a bowl, pour dressing over it, and toss gently. Top with crumbled feta and herbs or chives before serving.
