Step-by-Step Instructions
  1. Soak the rice noodles in warm water for about 15 minutes until they soften and become pliable.
  2. In a large pot, pour in your chicken or vegetable broth and heat it over medium flame, bringing it to a gentle simmer.
  3. Heat a tablespoon of oil in a separate skillet, add the minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add your sliced chicken, pork, or tofu to the skillet and cook for about 4-5 minutes until browned.
  5. Mix in the julienned carrots and chopped bok choy or spinach into the skillet, sauté for an additional 2-3 minutes.
  6. Transfer the sautéed mixture into the simmering pot of broth, stir in the soy sauce and chili oil.
  7. Stir in the soaked rice noodles into the simmering broth and cook for an additional 2-3 minutes until heated through.
  8. Taste the broth and adjust the seasoning with salt and pepper before serving.
  9. Ladle the soup into bowls and garnish generously with chopped green onions and fresh cilantro.
