Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine glutinous rice flour and sugar before gradually adding warm water. Stir until a smooth batter forms, about 2-3 minutes.
  2. Transfer to a microwave-safe bowl, cover with a damp towel, and microwave on high for 3 minutes. Stir and microwave for another 1-2 minutes until sticky and translucent. Alternatively, steam for about 25 minutes.
  3. Once cooked, let the dough cool for about 10 minutes. Dust a clean surface with cornstarch.
  4. Pinch off small pieces of the cooled dough and flatten them. Wrap each disc around a peeled peach, sealing the edges.
  5. Place the wrapped mochis on a tray dusted with cornstarch. Cover with plastic wrap and refrigerate for at least 30 minutes.
  6. Serve chilled and enjoy with coconut ice cream or a drizzle of honey.
