  • 4 cups seedless watermelon cubed
  • 1 tablespoon fresh ginger grated

  • 2 tablespoons honey or agave syrup adjust for sweetness
  • 2 cups sparkling water or club soda
  • Fresh mint leaves for garnish
  • Ice cubes

Method
 

  1. In a blender, combine the watermelon cubes, grated ginger, lime juice, and honey or agave syrup. Blend until smooth.
  2. Strain the mixture through a fine mesh sieve into a large pitcher to remove any pulp, pressing down with a spoon to extract as much juice as possible.
  3. Fill glasses with ice cubes and pour the watermelon juice mixture over the ice, filling each glass about two-thirds full.
  4. Top each glass with sparkling water or club soda and gently stir to combine.
  5. Garnish with fresh mint leaves and serve immediately.
