  2. Add 2 cups of thinly sliced yellow onion, 4 cloves of minced garlic, and 1 inch of fresh ginger cut into thin matchsticks to the pot. Sauté these ingredients for 5-6 minutes until they're soft and fragrant. Season with 2 teaspoons of salt and 1 teaspoon of black pepper to enhance their flavors.
  3. Pour in 8 cups of chicken broth, along with 3 tablespoons of tamari, 1 tablespoon of rice vinegar, 1/2 teaspoon of turmeric, and 1/2 teaspoon of ground coriander. Stir to combine and bring to a gentle boil, about 3-4 minutes.
