Method
 

Step-by-Step Instructions
  1. Trim the ends of the carrots for uniform length and peel them thoroughly.
  2. Combine vegetable stock, ketchup, apple cider vinegar, soy sauce, and liquid smoke in a mixing jug.
  3. Whisk in smoked paprika, onion powder, garlic powder, and maple syrup until blended.
  4. Heat a skillet over medium heat and add olive oil. Place carrots in the skillet and pour marinade over them.
  5. Cover and let simmer for 25 minutes or until fork-tender.
  6. Remove from heat and let rest in marinade for 20 minutes.
  7. Assemble by placing each carrot in a bun and adding desired toppings.
