- In a medium saucepan, combine 1 cup of water and 1 cup of sugar over medium heat. Whisk until the sugar dissolves and bring to a gentle simmer. Remove from heat and let cool.
- Juice 4-6 fresh lemons until you have about 1 cup of juice, removing seeds as you go.
- Peel and chop 1-2 cups of fresh dragon fruit, blend with a tablespoon of water until smooth.
- In the blender, add the cooled simple syrup, lemon juice, and cold water. Blend briefly to combine and adjust sweetness if needed.
- Serve the lemonade over ice and garnish with dragon fruit cubes, lemon wedges, and fresh mint.
