  • 2 tablespoons Olive Oil Can use avocado oil for a nutty twist

  • 2 cups Red Bell Peppers Can substitute with yellow or green peppers
  • 2 cloves Garlic Fresh garlic is best
  • 2 tablespoons Lemon Juice Lime juice can also work

Method
 

Directions
  1. Preheat your oven to 400°F (200°C).
  2. Slice the red bell peppers into strips, toss with olive oil, salt, and pepper, then spread on a baking sheet and roast for about 20 minutes.
  3. Once the peppers are roasted, blend them with minced garlic and lemon juice until smooth.
  4. In a skillet, heat olive oil and cook the tilapia fillets for 3-4 minutes on each side until golden brown.
  5. Pour the roasted pepper sauce over the tilapia and let simmer for 1-2 minutes before serving.
