Cooking Steps
  1. Preheat your oven to 300°F (150°C).
  2. In a large, oven-safe pot, heat vegetable oil over medium-high heat. Sear the beef chuck roast on all sides for about 4-5 minutes each until deep brown.
  3. Remove the beef from the pot. Sauté chopped sweet onions, minced garlic, and grated fresh ginger for 3-4 minutes until onions are translucent.
  4. In a bowl, whisk together gochujang, soy sauce, brown sugar, and beef broth until smooth. Pour over the sautéed aromatics in the pot.
  5. Return the beef to the pot, cover, and bake for 3-4 hours until fork-tender.
  6. Remove from the oven, let rest for 15 minutes. Shred the beef over cooked rice, drizzle with sauce, and garnish with cilantro and kimchi.
