Cooking Steps
- Preheat your oven to 300°F (150°C).
- In a large, oven-safe pot, heat vegetable oil over medium-high heat. Sear the beef chuck roast on all sides for about 4-5 minutes each until deep brown.
- Remove the beef from the pot. Sauté chopped sweet onions, minced garlic, and grated fresh ginger for 3-4 minutes until onions are translucent.
- In a bowl, whisk together gochujang, soy sauce, brown sugar, and beef broth until smooth. Pour over the sautéed aromatics in the pot.
- Return the beef to the pot, cover, and bake for 3-4 hours until fork-tender.
- Remove from the oven, let rest for 15 minutes. Shred the beef over cooked rice, drizzle with sauce, and garnish with cilantro and kimchi.
