- Rinse your white fish fillets under cold water, then pat them dry gently with a paper towel.
- Choose a heatproof plate or shallow dish that fits comfortably inside your steamer.
- In a mixing bowl, combine minced garlic, sliced Thai chilies, lime juice, fish sauce, soy sauce, sugar, and broth. Whisk until sugar dissolves.
- Pour the lime-garlic sauce generously over the fish fillets. Allow to marinate for up to 15 minutes if desired.
- Set up your steamer and fill it with water without touching the dish with the fish. Bring to a gentle simmer.
