  • 1 medium cucumber Sliced into thin rounds
  • 2 medium carrots Shredded or julienned
  • 1 medium red onion Chopped
  • 1/4 cup cilantro Chopped
  • 1/4 cup mint Fresh
For the Dressing
  • 3 tablespoons lime juice Freshly squeezed
  • 1 tablespoon fish sauce Or soy sauce for plant-based option
  • 1 teaspoon sugar Or coconut sugar for flavor
  • 1 clove garlic Minced
  • 1 small sliced chili Adjust to taste
For Serving
  • 1/4 cup crushed peanuts or cashews For topping

Method
 

Cooking Instructions
  1. Season the beef with salt and pepper. Preheat grill to medium-high heat.
  2. Grill the beef for 3-4 minutes on each side until medium-rare. Let it rest for 5 minutes before slicing.
  3. In a bowl, whisk together lime juice, fish sauce, sugar, minced garlic, and sliced chili.
  4. Slice the cucumber, shred the carrots, and chop the cilantro and mint.
  5. In a large bowl, toss together cucumber, carrots, red onion, cilantro, and mint.
  6. Add the sliced beef on top and pour the dressing over the salad. Toss gently to combine.
  7. Serve immediately, garnished with crushed peanuts or additional herbs.
