Ingredients
  

  • 1 ½ pounds boneless chicken breasts
  • ½ cup teriyaki sauce
  • 1 pear diced
  • 1 cup pineapple chunks
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice
  • ¼ cup diced red onion
  • Corn tortillas
  • Fresh cilantro for garnish

Method
 

  1. Marinate chicken in teriyaki sauce for at least 30 minutes.
  2. Grill or sauté chicken until cooked through and slice.
  3. Toss pineapple and pear with olive oil and grill until charred.
  4. Chop grilled fruit and mix with red onion and lime juice to make salsa.
  5. Serve chicken in tortillas topped with the fruit salsa and cilantro.

Notes

  • Make it spicier by adding jalapeños to the salsa.
  • Use chicken thighs for extra juiciness.
  • Salsa can be made ahead and chilled.
