  • 2 cups cooked white rice
  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon vegetable oil
  • 1 cup broccoli florets
  • 1 cup sliced bell peppers any color
  • 1 cup snap peas
  • 1/2 cup teriyaki sauce
  • 2 green onions sliced
  • 1 tablespoon sesame seeds optional

Method
 

  1. In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-7 minutes.
  2. Add the broccoli, bell peppers, and snap peas to the skillet. Stir-fry for another 3-5 minutes until the vegetables are tender-crisp.
  3. Pour the teriyaki sauce over the chicken and vegetables. Stir to coat everything evenly and cook for an additional 2-3 minutes until heated through.
  4. Serve the teriyaki chicken and vegetables over a bed of cooked rice.
  5. Garnish with sliced green onions and sesame seeds, if using.
