- Prepare the Teriyaki Sauce: Whisk together 1/4 cup of soy sauce, 2 tablespoons of honey or brown sugar, 2 tablespoons of rice vinegar, and 1/4 cup of water. Add minced ginger and garlic, and set it aside.
- Sear the Chicken: Heat 2 tablespoons of vegetable oil in a skillet. Season chicken thighs with salt and pepper, place them skin-side down, and cook for 5-7 minutes until golden brown and fully cooked.
- Coat the Chicken in Sauce: Pour the prepared teriyaki sauce over the seared chicken and stir to coat evenly. Allow to bubble for 1-2 minutes.
- Thicken the Sauce: Mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry, add it to the skillet, and stir for 2-3 minutes until thickened.
