Cook the Beef:In a large skillet or pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
Add Onion & Garlic:Stir in diced onion and garlic. Cook for 2-3 minutes until soft and fragrant.
Season & Simmer:Add taco seasoning, then stir in broth, diced tomatoes, tomato sauce, and uncooked pasta. Bring to a boil.
Cook the Pasta:Reduce heat, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is tender and sauce is thickened.
Finish Creamy & Cheesy:Remove from heat and stir in sour cream and cheddar cheese until melted and creamy. Adjust salt and pepper to taste.
Serve:Garnish with fresh cilantro or green onions. Serve hot with tortilla chips or a side salad!
