Taco Pasta Delight Recipe is a family favorite meal.

The best of both worlds—Mexican flavor meets pasta perfection! This Taco Pasta Delight is a cheesy, zesty, one-pot wonder filled with seasoned ground beef, tender pasta, and classic taco toppings. It's quick, comforting, and sure to please the whole family!

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning or 2 tablespoons homemade
  • 2 cups beef or chicken broth
  • 1 10 oz can diced tomatoes with green chilies
  • 8 ounces uncooked pasta rotini, shells, or penne
  • 1/2 cup tomato sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Fresh cilantro or green onions for garnish optional

Method
 

  1. Cook the Beef:In a large skillet or pot, heat olive oil over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
  2. Add Onion & Garlic:Stir in diced onion and garlic. Cook for 2-3 minutes until soft and fragrant.
  3. Season & Simmer:Add taco seasoning, then stir in broth, diced tomatoes, tomato sauce, and uncooked pasta. Bring to a boil.
  4. Cook the Pasta:Reduce heat, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is tender and sauce is thickened.
  5. Finish Creamy & Cheesy:Remove from heat and stir in sour cream and cheddar cheese until melted and creamy. Adjust salt and pepper to taste.
  6. Serve:Garnish with fresh cilantro or green onions. Serve hot with tortilla chips or a side salad!

Notes

  • Swap ground beef with ground turkey or black beans for a lighter version.
  • Stir in corn or black beans for extra texture and flavor.
  • Great for meal prep—leftovers reheat beautifully!
