Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Wash and peel the sweet potatoes, then slice them into ¼-inch rounds and arrange them in a single layer on the prepared baking sheet.
  3. Drizzle with olive oil, sprinkle with salt and pepper, toss to coat evenly, then roast for 20–25 minutes, flipping halfway through.
  4. Remove from oven and top each round with brie cheese, returning to the oven for 5 minutes until melted.
  5. Remove from oven, add cranberries and pecans on top, garnish with fresh herbs if desired, and serve warm.
