- Preheat your oven to 400°F (200°C) or set your grill to medium heat. Line a baking sheet with parchment paper.
- Bring water to a rolling boil. Parboil sweet potato cubes for 5–7 minutes until fork-tender yet firm.
- In a medium bowl, whisk together brown sugar, maple syrup or honey, olive oil or melted butter, cinnamon, cayenne, and garlic powder until smooth.
- Toss the cooled sweet potato cubes in the glaze until fully coated.
- Assemble skewers by wrapping bacon slices around each sweet potato cube or alternating them.
- Place skewers on the prepared baking sheet or grill and cook for 25–30 minutes, flipping halfway through.
- Brush with more glaze during the last 5 minutes of cooking for a glossy finish.
- Let skewers rest for a few minutes before serving warm with dipping sauces.
