Ingredients
  

  • 4 boneless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Pineapple chunks and green onions for garnish

Method
 

  1. Add chicken to the crockpot.
  2. Whisk together pineapple juice, brown sugar, and soy sauce, then pour over chicken.
  3. Cook on low for 6-7 hours or high for 3-4 hours.
  4. Remove chicken and shred.
  5. Stir cornstarch and water together, add to the sauce, and cook on high for 15 minutes until thickened.
  6. Return chicken to the crockpot, mix well, and serve with rice. Garnish with pineapple and green onions.

Notes

  • For extra flavor, sear chicken before adding to the crockpot.
  • Add bell peppers for more color and texture.
