- Add chicken to the crockpot.
- Whisk together pineapple juice, brown sugar, and soy sauce, then pour over chicken.
- Cook on low for 6-7 hours or high for 3-4 hours.
- Remove chicken and shred.
- Stir cornstarch and water together, add to the sauce, and cook on high for 15 minutes until thickened.
- Return chicken to the crockpot, mix well, and serve with rice. Garnish with pineapple and green onions.

- For extra flavor, sear chicken before adding to the crockpot.
