  • 2 cups fresh corn kernels about 4 ears of corn
  • 1 medium avocado diced
  • 1 cup cherry tomatoes halved
  • 1/2 red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup lime juice about 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the fresh corn kernels, diced avocado, cherry tomatoes, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.
  3. Pour the dressing over the salad and gently toss to combine, being careful not to mash the avocado.
  4. Taste and adjust seasoning if necessary. Serve immediately or chill in the refrigerator for 30 minutes to allow the flavors to meld.
