  • 1 medium avocado optional

  • 2 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp rice vinegar or lime juice
  • 1 tbsp sesame oil or another oil

  • 1 cup smoked salmon optional

Method
 

Preparation
  1. Thinly slice the English cucumbers and sweet onions. Place cucumbers in a colander, sprinkle with salt, and let sit for about 10 minutes.
  2. Rinse cucumbers under cold water and pat dry with a kitchen towel.
  3. In a microwave-safe bowl, soften the whipped cream cheese by microwaving for 15 seconds. Whisk cream cheese, mayonnaise, soy sauce, rice vinegar, and sesame oil until smooth.
  4. In a mixing bowl, combine drained cucumber slices and sliced onions. Drizzle half of the dressing over the vegetables and let sit for 5 minutes.
  5. Add remaining dressing and mix-ins (if using). Toss gently until well coated.
  6. Transfer the salad to a serving dish and garnish as desired.
